Oven: 300 Degrees F
Serves: 6
3 large fresh egg whites
6 oz caster sugar
1.Lightly oil a baking sheet and line with greaseproof paper, which peals off very easily.
2.Place the egg whites in large bowl, and have the sugar measured and ready.
3.Whisk the egg whites until they form soft peaks, and you can turn the bowl upside down with out them sliding out (do not over beat them or they will start to collapse).
4.When they are ready start to whisk in the sugar a little at a time.
5.Spoon desert spoonfuls of the mixture onto the baking sheet.
6.Place the baking sheet in the oven, then immediately turn down the oven to 275, and cook for 1 hour.
7.When cool peel the meringues off the paper and serve as desired.
