FRUIT CAKE

Preparation time: 1 hour
Cooking time: 2.5 hours
Oven: 160C, 325F, Gas Mark 3

225 g butter
225 g soft brown sugar
2 tablespoons treacle
4 eggs
350g sifted plain flour
1 teaspoons baking powder
1.5 teaspoons ground cloves
1.5 teaspoons ground cinnamon
1.5 teaspoons ground nutmeg
100g ground almonds
225 g mixed dried fruits with dried cherries
225g raisins
225g sultanas
65ml(2.5fl oz) milk
Juice of 1 orange


1. Grease well a 20 cm (8 inch) round cake tin.

2. Cream the butter and beat in the sugar. Stir in the treacle mixing well.

3 .Break the eggs into a cup and beat with a fork, then mix a little bit at a time into the creamed butter & sugar, folding in a spoonful of the sieved flour after each bit, to prevent it from curdling.

4. When all the eggs are incorporated, add the baking powder and the spices to the remaining flour and fold into the mixture.

5. Stir in the ground almonds, then all the dried fruits, raisins & sultanas.

6. Last of all stir in the orange juice & milk.

7. Place the mixture into the prepared tin, and place in the centre of the preheated oven.

8. Bake for 2.5 hours. After 1 hour cover the tin loosely with tin foil to prevent the cake from getting too brown.

9. Cool the cake in the tin for a few mins, then remove from the tin and rest on a wire tray until cooled.

10.Store in an airtight tin or container.
