CHOCOLATE MOUSE

Preparation time: 30 mins

Serves 2

Two stemmed wine glasses or white ramekins


INGREDIENTS

110 g dark chocolate.
2 eggs separated

To serve:
2 heaped teaspoons whipped cream
1 tablespoon rum or brandy & some grated chocolate to garnish.



1. Set a small basin over a small pan of barely simmering water, break up the chocolate into small pieces, add these to the basin and stir till the chocolate has melted and you have a smooth sauce.

2. Next separate the eggs, the white into a medium-sized bowl and the yolk into a smaller one. Beat up the yolks then stir it well into the chocolate mixture, off the heat. Now stir the rum into it, and leave to cool for about 10 minutes.

3. Meanwhile, whisk up the egg whites to the soft-peak stage (that is, when you lift the whisk out of it, it leaves soft peaks,). Then, using a metal spoon, fold the egg whites into the chocolate mixture. Spoon into the stemmed wine glasses, cover with clingfilm and chill for a couple of hours.

4. To serve, top each with a blob of whipped cream and a sprinkle of grated chocolate
